I just switched to Ghost and am still getting used to it. However, I’m wondering why Ghost isn’t running on Niginx with http/3 yet. Especially since many people surf the Internet on their mobile devices.
Are there any technical issues?

Nothing stopping you from doing this, are you saying you tried and had issues?
You’re free to use any reverse proxy you want, but the Ghost team recommends Caddy as that’s what they’re running on their infrastructure. The software is made for them and they’re generous enough to let the rest of us selfhost it 
ich bin gerade erst von Wordpress zu Ghost gewechselt und habe noch nicht ganz den Überblick über Ghost. Erstmal einarbeiten in Ghost und dann kann ich immer noch http/3 aktivieren.

von Caddy habe ich zwar schon gehört, aber noch nicht mit gearbeitet.
