You can’t change portal text from your theme file. It comes from Ghost core installed file.
This is the file location. /var/www/ghost/versions/{version}/core/shared/config/defaults.json
If you use a self hosted ghost, you can follow this instruction. Remove "Publish with Ghost" button on portal - #8 by JavowiecPL
