Fix taste theme so that it more closely models demo?

hi all, total newbie here in 2025, hoping for help understanding why the taste theme looks so much beefier in the demo than in reality. in reality, i am limited to 4-5 posts on the homepage, each time i publish a new one the old one drops off into oblivion, even if i have added tags. and there are no places to add subheds or explanations as to how to keep all posts up on the homepage. unless i’m missing this?

looks great, right? how can i maintain all those subheds and posts on my own site so that it looks more like what is advertised? thank you, jdp
