The comparison tables sounds as if Ghost Analytics has some limited capabilities and / or your you need an extra analytics option on top.
So far I can not see anything issing though we are still running in a sandbox / production mode. Can any tell me, if there are any limitations in a self-hosted environment for the native analytics feature of Ghost?
No, there is no limitation in self-hosted version in terms of features. For Analytics specific, you need to create an account on Tinybird, which Ghost uses as analytics backend behind the scenes. More info here: How To Install Ghost With Docker (preview) - Ghost Developer Docs
Tinybird has a free-tier, but it’s possible that you’ll need to pay them depending to your traffic. Also they have a self-managed region option, that you can self-host a Tinybird instance. It’s currently free in beta period, but not clear the future plans, if it’ll be a paid service or not.

Perfect, thanks I wasn’t aware that Ghost uses a third party service for that.
