I have not found a way to include mail client sender icons.
They look like favicons for email and show up in the receiver’s inbox.
Is there a way to do this within Ghost I’m not aware of? If not, is it something the Development Team and my fellow bloggers would like?

As far as I know, this “feature” named as BiMi. You can check details here: https://bimigroup.org
Basically, it’s an open protocol but you need to have a officially licensed logo and buy certificates. DigiCert asks for $99 per month for the certificate (Buy Verified Mark Certificates (VMC) or Common Mark Certificates (CMC) | DigiCert)
Even if you take those steps and I’m not sure Ghost will able to send newsletter emails with verified logo attached. Mailgun also provides a document about this topic: BIMI Email Specification: Technical Tips for DNS Record Setup | Mailgun
