Is it possible to collect data (for example via forms) from and about users and let such data be part of their profile?
For example, asking about their age or hobbies, and based on the reply they give populate fields in their profile.

That is Ghost agnostic. It all depends on you and how you implement the form and user profile.
Ghost Team does provide data you can use outside of other data you may want:
