When using a feature image - the <figcaption> element with the author credit doesn’t appear.
However when using the insert image option, it does.
Both are using the unsplash integration plugin.

That’s expected. Feature images of posts/pages/tags are only stored as a URL, there’s nowhere in the database for the caption to be stored.

I’m assuming the <figcaption> element actually comes from unsplash, as I can’t see it in the theme template anywhere. Does that mean there’s no way to turn this on for the feature image, because of what you’ve stated above?

No, the <figcaption> is part of the editor, all images in your post/page content can have captions. For Unsplash selected images we automatically populate it for you with a credit to the Unsplash photographer.
