Renovate[Bot] Gulp-Zip 6.1.0 Broke All Monorepo Themes

Renovate[Bot] pushed the gulp-zip dependency to 6.1.0 for all themes in the monorepo [link], which has broken Gulp zip.

Cross-posting here to get added visibility on TryGhost/Themes Issue #399.
