In the last e-mail newsletter Ghost added this to the footer in their E-Mail, which is only visible in the e-mail not the post itself.
On the page it leads / triggers a popup immediately (see here)
Questions:
- does anyone know what third party provider is used here (I assume this is no a built in feature)?
- what are the settings / setup for this? Obviously the post is published and e-mailed. Though how do you set it up so that it is e-mail but not shown on the page?
There’s no third-party provider, this is built-in to Ghost 
As far as I’m aware, the feedback is only displayed on emails. However, because email can have a lot of automated processing (e.g. link checking), it looks like there’s an explicit confirmation on the post page before the email feedback is actually saved.

Thanks. I am not aware that this is a built in function, cool. But I can not see any settings and where exactly is the feedback / statistic shown? Is that part of the newsletter statistics?
The link you posted is from a newsletter, and contains authentication tokens to record feedback from the member.
You need to enable this on a per-newsletter basis. You can do this by going to a newsletter’s settings → content → Ask your readers for feedback.
This feedback is only for newsletter subscribers, and cannot be collected by web viewers (unlike comments). And yes, this is viewed alongside other newsletter stats.
