Caution: super newbie here. Sorry for the potentially super simple question.
I want to publish interviews with people and use more or less the same structure for each interview so people get used to the format and can quickly find the most relevant information for them.
I saw that there are Ghost templates for posts available but
a) I don’t see them when I edit my posts (I checked the right hand settings).
b) from the post template tutorial I understand that the tutorial just defines how the post looks and not how the content is structured.
Any clue how I can best achieve that? Make a draft post and then copy it each time?
A draft post that you copy is a pretty good option. To make it easily accessible, you can tag it as e.g. #template and create a custom view that filters for #template
Alternatively, what I personally use Obsidian to type up my posts. It’s pretty extensive with plugins.

I use templates and build a structure for my posts.
I then load these templates using CTRL+P > Template > Newsletter
After I type everything up, I use the Ghost Publish Plugin to push it to my instance.
From there, I polish it up and publish.

I did change the template up several times but I think I am pretty comfortable with where I’m at now.
I use Kortex for all my draft writing on Ghost or social media, then only when it’s ready do I copy and paste it to Ghost et al.
There is so much involved with writing these days, research, ai, capturing ideas and notes on the go, so only when that’s done, do I move it to Ghost. I have writing prompt templates, post layout templates and they give you so many others besides too. Could not live without it.
Highly recommended for any blogger or writer and the AI prompts and trainings will blow your mind.
